How Recipe Scaling Works
To scale a recipe, divide your desired servings by the original servings to get a scaling factor, then multiply every ingredient by that factor. Scaling from 4 to 6 servings means multiplying everything by 1.5.
What Doesn't Scale Linearly
- Seasoning and spices โ scale to about 75% of the calculated amount, then adjust to taste
- Raising agents โ baking powder and yeast often need slightly less than the full multiplier in large batches
- Cooking time โ larger volumes take longer but not proportionally; rely on internal temperature
- Pan sizes โ a doubled cake recipe needs a bigger tin or two tins, not double the depth
